The Cuban Sandwich (El Cubano)

It’s been a minute since my last post. Things were getting a little overwhelming for a while with papers due for school, Laura working extra hours which left me to keep Jack on his nightly schedule while simultaneously trying to get dinner ready. And the construction they’ve been doing in town has messed up traffic, so on top of all of that, it’s been hard to even get home on time to get it all done. But, it should all lighten up soon when the construction dies down and Laura’s busy season tapers off.

With all of that, I’ve still had ideas swimming in my head for things I feel like cooking or would like to try. I talk about food at work a lot (go figure), and one of the things that seems to resurface is making Cuban sandwiches. They’re really very simple to make, but when done properly, they can be incredibly satisfying. Read the rest of this entry »

Tortellini with Italian Sausage and Fresh Vegetables

A very good friend of mine requested a while back for a recipe that could be done in about 30 minutes. Understandably, as she is not only an Army wife to a special forces soldier, a mother of a daughter with a baby boy on the way, as well as a full time soldier herself with multiple deployments under her belt. She’s a busy woman. In addition, she’s probably one of the most selfless people I know, helping out friends and soldiers alike whenever they are in need. This one is for her.

Trying to come up with an under 30 minute recipe isn’t very easy, however. Many are familiar with the concept of cooking a quick dinner thanks to Rachel Ray’s tv show, as well as the plethora of quick and easy recipes from big food companies such as Kraft and Campbell’s. In either case, most of these meals are prepared from pre-made foods, which are typically processed and/or have funky ingredients in them. I try to keep things as from-scratch as I can when cooking.

Lasagna Bolognese alla Hardy

Lasagna Bolognese alla Hardy

What comes to mind when you think of a bolognese? It’s probably not the same thing that comes to my mind. It is my belief that ragu bolognese is one of the most misunderstood Italian sauces, ever. I’m no Italian, but I do think I can help set the record straight.

The words ragu bolognese usually conjure images of a thick and chunky tomato sauce with ground beef piled on top of a plate of spaghetti. Oh, right, Laura popped out a little baby boy! XD

It has been an absolutely amazing week. We got home from the hospital  on Saturday, and it has been nonstop for us ever since. My internet presence has definitely decreased. It is weird for both of us to be home all the time, tending to our little bundle. I find myself constantly cleaning and doing laundry in addition to the consolations, feedings, and burpings.

So, although things have certainly been busier for us, one thing remains a constant; we gotta eat. I ate a ridiculous amount of fast food, as the hospital (Army hospital) didn’t feed me (the guy in the Army,) so some healthy food was due. We had a hankering for some Chinese/Japanese fare, and I thought char siu pork ju bao, known as manapua here on the islands, would do the trick Read the rest of this entry »

French Canadian Ragout with Pickled Beets

I married into a French Canadian family. Quebecois, they call it. My father-in-law was born very north of Quebec City and moved to New England when he was young without speaking a word of English. Now, of course, he’s completely fluent, so much that you would never even know that he spoke French. My mother-in-law also French Canadian, grew up in Massachusetts, although I believe she is first generation. Don’t quote me on that, though.
